Wild Edibles: Fried Dandelion Heads for Dessert? (Gluten and Dairy-Free)

Yes, it can be done! Inspired by Feather Spirit’s recipe.

 Handful dandelion heads
1 egg
1/2 cup brown rice flour
1/2 cup almond milk
Pinch of cinnamon and nutmeg
Cooking oil
Gather your dandelion heads (mid-day is best when the flowers are open). Rinse in running water (or if really buggy, soak in water for a few minutes). Make sure all stem is removed from the heads. Dry on towel. While drying, heat your oil over medium heat and mix your batter. Combine the egg, almond milk, rice flour, and spices in a bowl and whisk well. Drop flower heads in the batter. Once the oil is ready, drop each flower head face down in the oil. Brown each side. Drizzle with maple syrup or honey.

Surprisingly tasty! I’m going to try a savory version next time.
